Jesse’s Cornbread

Recipe from Jesse Wilson

Ingredients

  • ¾ cup of all purpose flour

  • 2 ½ teaspoons baking powder

  • ¾ teaspoon salt

  • 1 ¼ cups yellow or white stone-ground cornmeal

  • 1 egg

  • 2-3 tablespoons of melted butter or bacon drippings

  • 1 cup milk

Directions

  1. Using a 9x9 inch pan or about fifteen 2-inch muffins, grease your pan with butter, oil, or bacon drippings. Place it in the oven until sizzling hot before adding your mixture to bake.

  2. Sift together dry ingredients.

  3. Beat egg in a separate bowl, and then beat into it the butter and milk.

  4. Combine all ingredients with a few rapid strokes.

  5. Place the batter in the hot pan.

  6. Bake for 20-25 minutes. Serve immediately.
